Put the mustard seeds into a pan of heated oil
Reduce to low flame when they pop
Add chilli powder,salt asafoetida and tumeric and stir for 3 minut
Turn off heat and let it cool
Add this mixture to the cut mangos and mix thoroughly
Keep this for 7 to 10 days for the flavour to seep into mangos
Add little bit of distilled vinegar if you like to preserve the freshness
